Herbed Wagyu Bresaola

Air-dried Wagyu beef eye of round, seasoned with aromatic herbs and aged slowly to develop clarity and depth. This is bresaola in the traditional sense: lean, finely grained, and sliced paper thin to showcase the texture of the beef rather than mask it.

Made from Ohio-raised Wagyu sourced from Sakura Wagyu Farms, the cut is cured, dried, and aged for approximately three to four months. During that time, moisture gradually reduces, flavor concentrates, and the herb blend settles into the meat without overpowering it. The result is supple yet structured, with a clean finish and natural richness from the Wagyu.

Pre-sliced for immediate use, it works as a refined snack on its own or as a non-pork centerpiece for a charcuterie board. Traditionally served with olive oil, lemon, and cracked pepper, it also pairs well with fresh cheeses and restrained wines that allow the beef to remain the focus.
