For over 120 years, the Gambassis have continued their family tradition of producing homemade cured products based on recipes handed down from father to son. The family’s primary goal is to bring back the ancient flavor of the past, preserved over time, to discerning customers’ own kitchen tables. Filippo Gambassi decided to bring his family tradition to Virginia where he has worked hard to respect the authentic cured meat-making process based only on simple ingredients and slow natural aging.
