Our founder and charcutier, Chad Nelan grew up with a hustler’s spirit in Aurora, Colorado—now home to beautiful restaurants like Annette, but a tougher place back then. He put his hands to good use by becoming a butcher and discovered a passion for charcuterie while playing around with techniques behind the shop counter. Experimenting in his basement-turned-meat lab, he created unique, delicious recipes that have become signatures. With a modest investment from his cousin, Elevation Meats was born. Built on a mission of exceptional taste, premium quality, and accessibility, we deliver high-quality products at an approachable price. Ten years later, we’re still super small (but growing) with a few awards under our belts and delivering products across the U.S.
Tempesta Artisan Salumi
Agostino Fiasche and his son Antonio are the proud guardians of a century-old Italian legacy. As co-founders of ‘Nduja Artisans Salumeria and Tempesta Artisan Salumi, the Fiasches are the culmination of five generations of Calabrian salumi makers. Like their namesake spreadable spicy salumi, Nduja Artisans is the perfect balance of fire and flavor. A proprietary blend of Calabrian Peppers and 100% Berkshire Pork highlight their focus on simplicity and quality, while paying homage to the Fiasches’ rich heritage. The success of their ‘Nduja has now afforded Agostino and Antonio the ability to dust off the Fiasche Family recipe book to test and unveil additional hand-made salumi. You can taste their family tradition with each bite.
Giorgio’s Naturals
Giorgio’s Naturals was established in 2019 with the goal of uniting the old world salami making traditions with a contemporary and modern feel. Our story traces its roots in the Italian tradition of making salami and the European tradition of drying meats. Nic has grown up in a small village in the north of Italy and has been making salami and Italian style meats since his childhood. It is a family tradition for him. In 2018 he decided to make Chicago his new home and wanting to continue his family tradition he seeked help from an Old family friend with which his dad had previously worked with. This is how Nic and Dan meet. Dan is the new generation and a master in dry-aging.
Coro Foods
Coro, the Italian word for chorus, is a metaphor for not only the chorus of non-traditional flavors in our meats but also the chorus of voices at Coro that come together to bring it to the world. Founded by women, we’re bringing new perspectives and voices to the cured meats industry. Our passion for food drives us to continuously taste, experiment and improve. Coro has been our workshop where we’ve honed our craft and imagined new, impossibly delicious flavors. But Coro is truly a chorus of voices. We are lucky to be surrounded by a team that shares a passion for what we create together. Each of us has something to offer and each has brought a unique palate and imagination to Coro, making us what we are today and what we will be tomorrow.
