Coro's version keeps that foundation intact and adds a quiet touch of curry that lifts the whole thing without pulling it off course. It's familiar enough to anchor a board and interesting enough to warrant a second look.
Made from humanely raised US pork with no added nitrates or nitrites — celery juice powder handles the cure. The spice blend is built around cracked black pepper and fennel seed, with the curry sitting in the background rather than leading. Like the Chipotle & Cocoa, the pork is vegetarian-fed and antibiotic-free, cured and fermented in small batches at Coro's Seattle operation.
Pre-sliced and shelf stable, the 3 oz pack is ready to eat straight out of the package. Layer it on a board with aged Manchego or Asiago and a small dish of Castelvetrano olives.
