Chipotle & Cocoa (Mole) Salami - Coro Foods
Chipotle & Cocoa (Mole) Salami — Sliced Pack
Cocoa and chipotle have been pulling off this combination in Mexican kitchens for centuries. Coro brought the same logic to salami — layering natural cocoa, cinnamon, and chipotle into a domestic pork base that's fermented and cured the traditional way. The heat builds slowly, the cocoa rounds it out, and the result is something you don't see in most charcuterie cases.
Made without nitrates or nitrites — celery juice powder does the curing work here. The pork is humanely raised in the US, never treated with antibiotics or hormones, and seasoned with turbinado sugar and sea salt before the spice blend goes in. Shelf stable and pre-sliced, the 3 oz pack is ready to open and eat.
Put it on a board next to sharp provolone or aged pecorino — the salt and bite of the cheese plays well against the sweetness in the salame. Works just as well folded onto a cracker with a smear of fig jam, or eaten straight out of the pack on a drive. Pairs with a cold beer, a smoky mezcal, or a medium-bodied red if you're going that direction.
The Maker
Coro Foods is a women-owned salumeria operating out of Seattle, Washington. Founded by two people who wanted more from the charcuterie aisle, they handcraft their salami in small batches using traditional curing techniques and all-natural ingredients. The Chipotle & Cocoa — originally named Mole, a nod to its culinary inspiration — has been one of their flagship flavors since the beginning.

FAQ
How spicy is this salami?
The heat from the chipotle is present but measured — it builds gradually rather than hitting up front. The cocoa and cinnamon soften the edges. Most people would call it mildly spicy rather than hot.
Does it contain nitrates or nitrites?
No added nitrates or nitrites. Coro uses celery juice powder as the curing agent, which is classified as uncured under USDA labeling standards.
Does this need to be refrigerated?
Not until opened. The salami is shelf stable — no refrigeration required before opening. Once open, keep refrigerated and consume within a few days.
What does the pack include?
One 3 oz pack of pre-sliced Chipotle & Cocoa salami, ready to eat. No peeling, soaking, or prep required.
Is this gluten-free?
Yes. Coro's Chipotle & Cocoa salami is gluten-free and contains no artificial ingredients.
