Most "grass-fed" beef at the grocery store is grass-fed and grain-finished — the animal grazed on pasture until it was moved to a feedlot for its last 90–180 days. Our animals are raised on pasture and finished on pasture, no feedlot. The supply chain is also different: grocery-store "grass-fed" comes through aggregators from dozens of anonymous suppliers. Every cut in your box comes from a small Midwestern family farm we have a direct relationship with.
Ancestral Blend is ground beef with 10% beef organ meat (liver, heart, kidney) mixed in. You get the micronutrient profile of a whole-animal diet without cooking organ meat separately. The blend ratio is small enough that you can't taste the difference — cooks the same, seasons the same, tastes the same. It's the easiest way to add organs to your diet if you're not ready to sear a liver yourself.
We ship at the beginning of every week — usually Monday through Wednesday — so your box always arrives before the weekend. Transit is 3–5 business days via FedEx, and every box is packed in dry ice and freight-grade insulation. It arrives cold - if not still frozen. Orders placed Wednesday or later usually move to the following week's batch, unless you're close enough to us that we can still make the window. No weekend transit means no thawed-meat surprises.
