A real smoking process takes real time. They cure the meat first, then hang it in the smokehouse with hickory burning low. It stays there until the exterior develops that mahogany color and the smoke has worked its way through the meat. You can taste the difference between this and the hams that get a spray of liquid smoke and a few hours in an industrial oven.

The Details

This is a collar-cut ham, trimmed to lock in natural juices with the shank bone left intact. When you carve it, you're working around the bone the way people have for generations. The bone adds authenticity, and when the feast is over, you've got what you need for a proper ham-and-bean soup.

This ham is not precooked. It arrives hickory-smoked but raw, ready for you to roast, glaze, and finish your way. Brown sugar, honey, maple, mustard - whatever your family's been doing for years, this ham can handle it.

Twenty or more people can eat well off this ham with leftovers to spare. The next day, you'll slice what's left for sandwiches. Two days later, cube the remainder into breakfast hash.
